  1. Mutton Marination
  2. 1 kg mutton
  3. 3 Onions
  4. 2 tomatoes
  5. 250 gm curd
  6. as per taste Salt
  7. 2 tablespoon oil
  8. 1 teaspoon turmeric powder
  9. 2 teaspoon red chilli powder
  10. 2 teaspoon Coriander powder
  11. 2 teaspoon Biryani Masala
  12. 3-4 tablespoon Ginger Garlic paste
  13. 1 handful Mint leaves chopped
  14. 1 handful coriander leaves chopped
  15. Rice
  16. 2.5. Cups Rice (Basmati preferred)
  17. 7 cups water
  18. 1 tablespoon ginger garlic paste
  19. 1 tablespoon oil
  20. 2 bay leaves,
  21. 4-5 cloves,
  22. 5-7 black pepper,
  23. 1 stick a piece of Cinnamon
  24. 1 teaspoon shah jeera
  25. Assembling
  26. 2 tablespoon ghee
  27. 1 Cup fried onion
  28. 1/2 cup mint leaves
  29. 1/2 cup coriander leaves
  30. 2 tablespoon kesar soaked in milk
  31. 1 teaspoon kewra water(optional)

Instructions to make to make Mutton Biryani

  1. Wash mutton properly and pressure cook it till 1 whistle with salt, turmeric, avoid adding water
  2. Slice the onions and deep fry them. Keep aside
  3. In the pot you have to cook biryani, take curd, add all the masalas in marination section and mix
  4. Add ginger garlic paste, now add mutton, add chopped tomatoes
  5. Hand Crush and add fried onions, add coriander and mint leaves, add oil and salt to taste mix nicely use hands so that masala coats mutton nicely, marinate for minimum 3-4 hours
  6. In another pot heat some oil, add all the khada masala mentioned in Rice section, ginger garlic paste and fry, now add water and salt once water starts boiling add washed rice.
  7. Let the rice boil, once its 3/4 done strain and immediately add cold water to stop cooking process, you can keep khada masala in rice or remove them if you don't like, the flavour has been added to rice, keep rice aside
  8. Take Mutton and cook it on low to medium flame, check in interval of 10 mins, so that it doesn't stick to bottom, no need of adding anything, mutton will cook on its own juice and curd. After around 25- 30 mins mutton will be cooked
  9. Assembling: Remove half mutton in a bowl along with masala
  10. Now in the pot over half mutton add a layer of rice and fried onions and coriander and mint leaves and 1 tablespoon ghee.
  11. Now add mutton masala, again Final layer of rice, fried onion, coriander and mint leaves and a table spoon of ghee
  12. Pour soaked Kesar on top to give nice color, add kewra water(optional)
  13. Cook it on low flame for 15-20 mins and once done allow it to rest for more 15 mins before final serving.
  14. Serve it with raita or salad😊
