The flavourful spicy biryani is the one of my favourite indian dish, be it chicken , egg or veg Biryani it has an authentic taste full of flavours. Just love to have spicy biryani with cool raita.
Ingredients and spices that need to be Take to make Veg dum Biryani:
- 1 glass basmati rice
- 3/4 cup curd
- 1 Potato cut into cubes
- 1 carrot cut into cubes
- 1/2 cup cauliflower
- 1/2 cup peas
- 10-12 cubes paneer
- Few Mix dry fruits
- As required Kesar soaked in water
- 1.5 tsp Biryani masala
- 2 tsp Red chilli powder
- 1/4 tsp turmeric powder
- 1 tsp coriander powder
- 2-3 green chillies chopped
- Handful Coriander leaves chopped
- handful Mint leaves chopped
- as required Brown onions
- 2 onions thinly sliced
- 1-2 tsp Ginger garlic paste
- 2 tomatoes roughly chopped
- 3-4 tbsp ghee
- 2-3 cloves
- 3-4 elaichi
- 1 inch dalchini
- 1 bay leaf
- as per taste Salt
Instructions to make to make Veg dum Biryani
- Take a mixing bowl and add curd to it whisk it to make it smooth and then add turmeric powder, coriander powder, ginger garlic paste, red chilli powder, biryani masala and salt in it. Mix it properly and then add all the veggies except paneer in it. Add coriander leaves and brown onions in it. Mix dry fruits in it and keep it aside for 15-20 mins.
- Now wash the rice. Cook rice add salt while cooking rice. Fry the paneer pcs in ghee.
- After 15 mins take a kadhai and add 3 tbsp ghee in it and 2 tsp oil in it. Once hot add tejpatta, laung, elaichi, dalchini in it. Once done add all the marinated vegetables in cook. Cook it for 5 mins. Sim the flame of gas and cover it for the next 15-20 mins till the masala is done. Keep stirring in between. Finally, add fried paneer pcs in it and mix it.
- Once the masala is done take out the half masala in a plate and put a layer of cooked rice on the top. Add a tsp of ghee kesar water, sprinkle biryani masala, coriander leaves mint leaves and fried onions on it then again spread a layer of vegetables and top it with rice and spread ghee,kesar water, biryani masala,. Coriander leaves, mint leaves and fried onions on it and cover it and seal it with aata and cook for few mins in sim flame.
- Since whatever we have added is already cooked so we don't need to cook for a long time just a few mins then switch off the gas and let it be like that only for 5 -10 mins after that u can serve it with raita or any curry.
