Ingredients and spices that need to be Prepare to make Chicken Dum Biryani:

  1. For Biryani Rice
  2. 1 kg Basmati
  3. 1 star anise
  4. 1 bay leaf
  5. 1 cinnamon stick
  6. 2-3 green cardamoms
  7. 3-4 black peppercorns
  8. 1-2 Black Cardamom
  9. 1 mace
  10. 1 tsp cumin seeds
  11. 1 Tbsp ghee
  12. as per taste Salt
  13. For Chicken marination
  14. 1 kg Chicken on bones
  15. 2 Tbsp ginger-garlic paste
  16. 1 tsp green chilli paste
  17. 1 tsp red chilli powder
  18. 1/2 tsp turmeric powder
  19. 1/2 cup fried onions
  20. 2 Tbsp Biryani masala
  21. 1 sprig mint leaves chopped
  22. 1 sprig coriander leaves chopped
  23. 2 Tbsp ghee
  24. 400 gms yogurt
  25. as per taste Salt

Instructions to make to make Chicken Dum Biryani

  1. Wash the rice 3-4 times and soak the rice in water 40 mins
  2. In a heavy bottomed vessel boil water and add ghee, mace, cinnamon stick, black cardamoms, green cardamoms, black peppercorns, star anise, coriander leaves, mint leaves, bay leaf, cumin seeds.
  3. Add rice and on medium flame cook to 90%, drain and spread on a plate to cool.
  4. To marinate the chicken - in a bowl add the chicken and red chilli powder, turmeric powder, green chilli paste, ginger-garlic paste, coriander leaves, mint leaves, ghee, yoghurt, Biryani masala, salt. Mix well
  5. Cooking the Biryani - in a heavy bottomed vessel, add 2 Tbsp ghee and add the marinated chicken. On medium flame cook the chicken until oil leaves surface and bubbles are seen. Take out the chicken and set aside
  6. In the same vessel add one layer of rice, 1 Tbsp fried onions, few mint leaves, few coriander leaves, 2 Tbsp of saffron infused milk, one layer of cooked chicken pieces, repeat the layer until it reaches top of the vessel
  7. In a small bowl add a heated charcoal with 1 tsp ghee and put on the biryani vessel, cover and for 5 mins wait to get a smoky effect, set aside the charcoal
  8. Add some more ghee, coriander leaves, mint leaves and saffron infused milk and seal the cover with wheat dough all around it.
  9. Place it on Dum for 30 mins
  10. Set aside the cover.
  11. To plate gently take the rice first and then the chicken. Serve with Raita and enjoy
